Ingredients
1 lb Italian sausage (mild or spicy)
2 tbsp olive oil
1 medium onion, diced
2 cloves garlic, minced
1 cup heavy cream
1 cup chicken broth
1 tsp Italian seasoning
1 lb gnocchi
2 cups fresh spinach leaves
1/2 cup freshly grated Parmesan cheese
Salt and pepper to taste
Instructions
1. In a large skillet, heat olive oil over medium heat. Add sausage and cook, breaking it apart, until browned (5-7 minutes).
2. Add onion and garlic to the skillet. Cook until onion is soft and garlic is fragrant (3-4 minutes).
3. Stir in heavy cream, chicken broth, and Italian seasoning. Simmer for 2-3 minutes.
4. Add gnocchi to the skillet, cover, and cook for 5-7 minutes until tender.
5. Stir in spinach and Parmesan. Season with salt and pepper. Serve warm.
Notes
Avoid overcooking the gnocchi to prevent gumminess.
Thin sauce with extra broth or milk if too thick.
Use gluten-free gnocchi for a GF version.
Store leftovers in the fridge up to 3 days. Reheat with a splash of broth.
