  • 1.5 pounds bone-in, skin-on chicken thighs
  • 8 ounces mushrooms, sliced
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • ½ cup chicken broth
  • ½ teaspoon dried thyme
  • ½ teaspoon paprika
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish (optional)

Instructions

1. Pat chicken thighs dry and season both sides with salt, pepper, paprika, and thyme.

2. Heat olive oil in a large skillet over medium-high heat. Place chicken thighs skin-side down and sear for about 5-6 minutes until skin is golden and crispy. Flip and cook the other side for another 4-5 minutes. Remove chicken from skillet and set aside.

3. In the same skillet, add sliced mushrooms and cook for 4-5 minutes until they release moisture and begin to brown.

4. Stir in minced garlic and cook for about 30 seconds until fragrant.

5. Pour in chicken broth and scrape up any browned bits from the bottom of the skillet. Reduce heat to medium-low, add heavy cream, and stir until well combined. Simmer for 2-3 minutes until sauce slightly thickens.

6. Add chicken thighs back into the skillet, skin-side up. Spoon sauce and mushrooms over the chicken. Cover and cook for 10-15 minutes until chicken is cooked through and tender.
