  • 1 cup breadcrumbs
  • 1 large egg
  • 1/2 cup grated Parmesan cheese

  • 1 teaspoon dried thyme
  • 2 tablespoon olive oil
  • 2 tablespoon butter
  • 8 ounce sliced mushrooms
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1/4 cup grated Parmesan cheese (for the sauce)
  • 1/4 cup chopped fresh parsley (for garnish)

Instructions

1. In a large bowl, combine the ground chicken, breadcrumbs, egg, Parmesan, minced garlic, salt, pepper, and thyme. Mix gently until just combined.

2. Form the mixture into evenly sized meatballs, about 1.5 inches in diameter.

3. Heat olive oil in a large skillet over medium heat. Add the meatballs and cook until golden brown on all sides, about 6-8 minutes. Remove and set aside.

4. In the same skillet, melt butter over medium heat. Add sliced mushrooms and sauté until golden and tender, about 5-7 minutes. Stir in minced garlic and cook for an additional minute.

5. Pour in chicken broth and bring to a simmer, scraping any browned bits from the skillet. Stir in heavy cream and Parmesan cheese, and season with salt and pepper.

6. Return the meatballs to the skillet with the sauce. Reduce heat to low and let simmer for 10 minutes to cook through and absorb flavors.

7. Garnish with freshly chopped parsley before serving.
