Ingredients
- 1 cup orzo pasta
- 1 cup broccoli florets
- 1 cup shredded cheddar cheese
- 1/2 cup heavy cream
- 2 tablespoon olive oil
- 1/2 cup diced onion
- 2 cloves garlic, minced
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 3 cup vegetable or chicken broth
Instructions
1. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes, until it becomes translucent and fragrant.
2. Stir in the minced garlic and garlic powder, cooking for an additional minute. Then, add the orzo pasta and toast it for another 1-2 minutes.
3. Pour in the vegetable or chicken broth and bring the mixture to a boil. Once boiling, reduce the heat to a simmer and add the broccoli florets. Cover the pot and let the orzo and broccoli cook for about 8-10 minutes, stirring occasionally.
4. Once the orzo is cooked through, remove the pot from the heat and stir in the heavy cream and shredded cheddar cheese. Gently mix until the cheese is fully melted and the sauce is creamy and well-combined.
5. Finally, season with salt and pepper to taste. Serve warm and enjoy!
Notes
To make a gluten-free version, substitute regular orzo with gluten-free orzo pasta.
You can freeze leftovers by allowing them to cool completely before transferring to an airtight container.
