  • 1 pound short pasta

  • ½ cup spicy cheddar cheese, diced
  • 1 avocado, diced
  • 4 tablespoon salted butter
  • 2 teaspoon smoked paprika
  • 2 tablespoon chili powder
  • 12 teaspoon cayenne pepper
  • ¼ cup mayonnaise or yogurt
  • 2 tablespoon lime juice
  • Salt to taste

Instructions

1. Make the Dressing: In a large bowl, combine the cream cheese, sour cream, olive oil, grated garlic, chopped chives, crumbled Cotija or feta cheese, and a pinch of salt and pepper. Mix until smooth.

2. Cook the Pasta: Bring a pot of salted water to a boil and cook the short pasta until al dente. Drain and toss with the dressing.

3. Assemble the Salad: Add shredded romaine, grilled corn, torn basil, chopped cilantro, diced spicy cheddar, and diced avocado to the pasta. Toss gently.

4. Make the Chili Butter: Melt the salted butter in a skillet over medium heat. Stir in smoked paprika, chili powder, and cayenne pepper. Cook for 1 minute.
