Description

Creamy Tortellini Soup is a comforting and indulgent dish that combines a rich, creamy broth with tender cheese-filled tortellini pasta. The soup is typically made with Italian sausage, garlic, onions, and herbs, and is finished with a touch of heavy cream for a velvety texture.

Ingredients

Scale
  • 2 tablespoon olive oil
  • 1 pound Italian sausage
  • 3 cloves garlic, minced
  • 1 medium sweet onion, diced
  • 1 tablespoon Italian seasoning
  • 4 cup chicken stock
  • 9 ounce refrigerated three-cheese tortellini
  • 2 cup chopped kale
  • 1 cup heavy cream

Instructions

1. 1. In a large pot, heat the olive oil over medium heat. Add the Italian sausage and cook, breaking it into small pieces, until it’s browned and cooked through.

2. 2. Once the sausage is cooked, add the minced garlic, diced onion, and Italian seasoning to the pot. Sauté for 2-3 minutes, allowing the flavors to meld and the onions to soften.

3. 3. Pour in the chicken stock and bring the mixture to a simmer, allowing the flavors to deepen and the broth to heat through.

4. 4. Stir in the refrigerated three-cheese tortellini and the chopped kale. Cook according to the tortellini package instructions until the pasta is tender and the kale is wilted.

5. 5. Reduce the heat to low and stir in the heavy cream. Heat through, ensuring the soup is warmed and the creamy texture is achieved.

Notes

Leftover Creamy Tortellini Soup can be stored in an airtight container in the refrigerator for up to 4 days. When reheating, do so gently over low heat, stirring frequently to prevent the cream from curdling.

If freezing, it’s best to do so without the tortellini and kale. Freeze the soup base, and then add the fresh tortellini and kale when reheating.
