This hearty and flavor-packed dish combines the irresistible duo of sweet potatoes and savory chicken, with the added crunch of crispy bacon and the creamy richness of ranch seasoning.

Ingredients

Scale
  • 4 large sweet potatoes
  • 1 lb boneless, skinless chicken breast, cooked and shredded
  • 6 slices bacon, cooked and crumbled
  • 1 cup ranch dressing
  • 1 cup shredded cheddar cheese
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup chopped chives or green onions

Instructions

1. Start by preheating your oven to a toasty 400°F (200°C).

2. Wash the sweet potatoes thoroughly and use a fork to poke a few holes in each one.

3. Place the prepared sweet potatoes on a baking sheet and let them bake for 45-60 minutes, or until they’re nice and tender.

4. In a large bowl, combine the shredded chicken, crumbled bacon, ranch dressing, garlic powder, onion powder, salt, and black pepper.

5. Mix everything together until the flavors are evenly distributed.

6. Once the sweet potatoes are tender and cooled enough to handle, slice them open lengthwise.

7. Gently mash the insides with a fork, then spoon the chicken and bacon mixture into each sweet potato, packing it in generously.

8. Sprinkle that shredded cheddar cheese over the top of each stuffed sweet potato.

9. Pop the loaded sweet potatoes back into the oven for an additional 10-15 minutes, or until the cheese is melted and bubbly.

10. Remove the Crispy Bacon Ranch Chicken Loaded Sweet Potato Bombs from the oven and sprinkle them with the chopped chives or green onions.

11. Serve these bad boys warm.

Notes

These sweet potato bombs can be prepared in advance and stored in the refrigerator until ready to bake. You can customize the filling by using ground turkey instead of chicken or adding different vegetables.
