Crispy Cheesy Stuffed Mashed Potato Nests are a crowd-pleasing favorite, blending creamy mashed potatoes with melted cheese for a delightful appetizer or side dish.
Ingredients
- 4 large russet potatoes, peeled and cut into chunks
- 1 large egg
- 1/2 cup shredded cheddar (or mozzarella)
- 1/4 cup grated Parmesan
- 1/4 cup milk
- 2 tablespoon butter, melted
- 2 tablespoon all-purpose flour (or breadcrumbs)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Cooking spray or oil (for muffin tin)
- 1 cup shredded mozzarella (or cheddar)
Instructions
1. Boil the peeled and chunked russet potatoes in salted water for 15 to 20 minutes, until fork-tender. Drain and mash until smooth.
2. Allow the mashed potatoes to cool for about 5 minutes, then stir in the egg, cheddar, Parmesan, milk, melted butter, flour, salt, and pepper until thick and scoopable.
3. Preheat your oven to 400°F. Grease a muffin tin. Spoon the potato mixture into each cup, pressing up the sides to form a nest with a well in the center.
4. Bake the potato nests for 20 to 25 minutes, until golden brown and crisp on the edges.
5. Add a spoonful of the shredded cheese (and any optional add-ins) into the well of each nest.
6. Return the filled nests to the oven for an additional 3 to 5 minutes, just until the cheese is melted and gooey.
7. Allow to cool for 5 minutes, then carefully remove from the muffin tin and serve warm.
Notes
Feel free to experiment with different cheese varieties or add-ins such as cooked crumbled bacon, chopped green onions, or sautéed mushrooms/spinach.
