Ingredients
- 2 large boneless, skinless chicken breasts
- 6 slices crispy bacon, crumbled
- 1 cup shredded mozzarella cheese
- 1 cup diced bell peppers (red, yellow, and green)
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 4 large flour tortillas
- 1/4 cup barbecue sauce
Instructions
1. Preheat the oven to 375°F.
2. Season the chicken breasts with smoked paprika, garlic powder, onion powder, salt, and black pepper.
3. Cook the seasoned chicken in a skillet over medium heat for 6-7 minutes on each side until golden brown and cooked through. Allow to rest, then shred into bite-sized pieces.
4. In a bowl, combine shredded chicken, crumbled bacon, mozzarella cheese, and diced bell peppers. Stir to create the filling.
5. Lay tortillas flat and spoon filling onto one half of each tortilla. Drizzle barbecue sauce over filling, then fold the other half over to create a pocket.
6. Place assembled pockets on a baking sheet and bake for 15-20 minutes until golden brown and crispy.
Notes
