Description

A mouthwatering fusion of crispy, juicy chicken, tangy Caesar dressing, and crunchy romaine lettuce, all nestled between the buttery goodness of toasted croissants.

Ingredients

Scale
  • 4 croissants, toasted
  • 3 cup romaine lettuce, chopped
  • 1/2 cup shaved Parmesan cheese
  • 1 pound boneless, skinless chicken thighs
  • 1 large egg (for marinating)
  • 2 tablespoon flour
  • 3 tablespoon cornstarch
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon garlic, minced
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Canola oil, for frying
  • 1 large egg (for dressing)
  • 1/2 cup olive oil
  • 1/2 cup shaved Parmesan cheese
  • 2 tablespoon fresh lemon juice
  • 3 anchovy fillets
  • 1 tablespoon garlic, minced
  • 1 teaspoon Dijon mustard
  • 1 teaspoon red apple vinegar
  • 1/2 teaspoon Worcestershire sauce
  • 1/2 teaspoon black pepper
  • Salt, to taste
  • 1 cup panko breadcrumbs
  • 1/4 cup unsalted butter
  • Pinch of salt

Instructions

1. To create the Crispy Chicken Caesar Sandwich, we’ll start by marinating the chicken. In a bowl, mix the egg, soy sauce, sesame oil, garlic, onion powder, salt, pepper, flour, and cornstarch. Coat the chicken thighs in this mixture and let them marinate for at least 20 minutes.

2. While the chicken is marinating, let’s prepare the crunchy panko topping. In a pan over medium-low heat, melt the butter, then add the panko breadcrumbs and a pinch of salt. Stir the mixture until it’s golden brown, about 3-4 minutes. Set the toasted panko aside for later.

3. Next, let’s whip up the creamy Caesar dressing. Using a blender or food processor, blend the egg, olive oil, Parmesan, lemon juice, anchovy fillets, garlic, Dijon mustard, red apple vinegar, Worcestershire sauce, black pepper, and salt until the mixture is smooth and well-combined.

4. Time to fry the marinated chicken to perfection! Heat the canola oil in a pot to 350°F. Carefully add the chicken and fry until it’s crispy and golden, about 8-10 minutes. Drain the chicken on a wire rack to ensure maximum crispiness.

5. In a bowl, toss the romaine lettuce with the Caesar dressing, toasted panko, and Parmesan cheese. Spread some extra dressing on the bottom halves of the toasted croissants. Place the crispy chicken on each croissant, then top with the salad mixture and a sprinkle of additional Parmesan. Close the sandwiches with the croissant tops and serve immediately.

Notes

To make the Crispy Chicken Caesar Sandwich healthier, consider using whole grain croissants or a lettuce wrap instead of traditional croissants to reduce calories and increase fiber. You can also opt for grilled chicken instead of fried to cut down on fat and calories. For the dressing, use Greek yogurt as a base instead of mayonnaise to lower calories and add protein. Additionally, incorporate more vegetables like sliced tomatoes, cucumbers, or bell peppers into the sandwich for added nutrients and crunch.
