Ingredients
- 2 cup cooked chicken, shredded
- 1 cup cooked bacon, crumbled
- 1 cup shredded cheddar cheese
- 1/2 cup ranch dressing
- 1 cup coleslaw mix
- 12 large egg roll wrappers
- Oil for frying
- Salt and pepper to taste
Instructions
1. In a large bowl, combine the shredded chicken, crumbled bacon, shredded cheddar cheese, ranch dressing, and coleslaw mix. Season with salt and pepper to taste, and mix everything together until well incorporated.
2. Lay an egg roll wrapper on a clean surface with a corner pointing towards you. Place 2-3 tablespoon of the filling in the center of the wrapper. Fold the bottom corner over the filling, then fold in the sides and roll tightly. Seal the top corner with a little water to secure the roll.
3. In a deep skillet or frying pan, heat oil over medium-high heat until it reaches 350°F. Carefully add the egg rolls to the hot oil, a few at a time, and fry until they’re golden brown and crispy, about 3-4 minutes per side. Remove the fried egg rolls and drain them on paper towels.
