Ingredients

Scale
  • 1 pound Brussels sprouts, trimmed and halved
  • 1 pound carrots, peeled and cut into sticks or rounds
  • 2 tablespoon olive oil
  • 2 tablespoon maple syrup
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional)

Instructions

1. Preheat your oven to 425°F and line a baking sheet with parchment paper.

2. Add the trimmed and halved Brussels sprouts and the peeled, sliced carrots to a large mixing bowl.

3. In a small bowl, whisk together the olive oil, maple syrup, smoked paprika, garlic powder, salt, black pepper, and cayenne pepper (if using).

4. Pour the maple glaze over the Brussels sprouts and carrots, then toss everything together until evenly coated.

5. Spread the glazed vegetables out in a single layer on the prepared baking sheet. Roast for 25-30 minutes, tossing every 10 minutes, until the Brussels sprouts are crispy and the carrots are tender.

6. Transfer to a serving dish and drizzle with more maple syrup if desired. Serve hot.

Notes

For a touch of heat, try adding cayenne pepper or honey-sriracha glaze. You can also experiment with other sweeteners like brown sugar or honey.
