Ingredients
- 2 pound boneless skinless chicken thighs
- 1 cup soy sauce
- 1 cup packed brown sugar
- 1 tablespoon cornstarch
- 1 teaspoon red pepper flakes
- Garlic and ginger to taste
- Water (if needed)
Instructions
1. Place the chicken thighs in the bottom of your crock pot and season with salt and pepper.
2. In a separate bowl, whisk together the soy sauce, brown sugar, cornstarch, and red pepper flakes until smooth. Add garlic and ginger if desired.
3. Pour the sauce over the chicken, ensuring each piece is coated. Cover and cook on low for 3-4 hours or until the chicken is tender.
4. If the sauce is too thin, shred the chicken and stir it back into the sauce to thicken.
5. Serve over rice and enjoy!
