Ingredients
- 2 cup cooked rice
- 1 pound boneless, skinless chicken breasts, cubed
- 1/2 cup soy sauce
- 1/2 cup frozen peas and carrots
- 2 large eggs, scrambled
- 2 green onions, sliced
Instructions
1. Prepare the Crockpot: Start by lightly spraying the crockpot with cooking spray to prevent sticking.
2. Add Chicken & Sauce: Place the cubed chicken in the crockpot and pour the soy sauce over the top. Stir to ensure the chicken is evenly coated.
3. Cook Chicken: Cover the crockpot and cook the chicken on low for 2-3 hours or on high for 1-2 hours, until it’s cooked through and tender.
4. Add Vegetables: Once the chicken is done, stir in the frozen peas and carrots. Cover and cook for an additional 30 minutes on low.
5. Add Eggs: While the vegetables are cooking, scramble the eggs in a separate pan. Gently fold the scrambled eggs into the crockpot.
6. Combine with Rice: Finally, add the cooked rice to the crockpot and stir everything together until it’s well combined and heated through.
