Ingredients
- 1 pound boneless, skinless chicken breasts
- 2 tablespoon fresh garlic, minced
- 1 cup low-sodium chicken broth
- 1/4 cup freshly squeezed lemon juice
- 2 tablespoon caper berries
- 2 tablespoon olive oil
- 1 tablespoon Italian seasoning
- 1/4 cup fresh parsley, chopped
- 2 tablespoon butter
Instructions
1. Season the chicken breasts with salt, pepper, and Italian seasoning.
2. Place the seasoned chicken in the crockpot, then add the minced garlic, chicken broth, lemon juice, caper berries, and olive oil. Stir gently to combine.
3. Cover the crockpot and cook on LOW for 4-5 hours or on HIGH for 2-3 hours, until the chicken is tender and fully cooked.
4. Remove the chicken from the crockpot and whisk the butter into the cooking liquid to create a smooth, flavorful sauce.
5. Place the chicken over cooked pasta or rice, spoon the sauce over the top, and garnish with fresh chopped parsley. Serve and enjoy!
