Ingredients
- 2 pound beef stew meat
- 4 medium potatoes, diced
- 1 cup carrots, sliced
- 1 cup celery, chopped
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cup beef broth
- 1 cup heavy cream
- 2 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoon cornstarch, optional for thickening
Instructions
1. Start by heating a large skillet over medium heat. Add the beef stew meat and brown it on all sides, about 5-7 minutes total.
2. Transfer the browned beef to your crockpot. Add the diced potatoes, sliced carrots, chopped celery, diced onion, and minced garlic. Give everything a good stir to combine.
3. Pour in the beef broth and stir in the Worcestershire sauce, dried thyme, salt, and black pepper. Gently mix everything together until well incorporated.
4. Cover the crockpot and cook the stew on low for 8 hours or on high for 4 hours, until the beef is tender and the vegetables are fork-tender.
5. About 30 minutes before serving, stir in the heavy cream.
6. If you’d like a thicker consistency, mix 2 tablespoon of cornstarch with a little cold water to create a slurry. Stir this into the stew during the last 30 minutes of cooking.
7. Ladle the hot, creamy stew into bowls and enjoy!
