Crockpot Pineapple Pork Loin is a sweet and savory slow-cooked dish that combines tender pork loin with the delightful sweetness of pineapple.
Ingredients
- 2–3 pound pork loin, trimmed of excess fat
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 cup pineapple juice (fresh or canned)
- 1 can pineapple chunks with juice
- 1/4 cup soy sauce
- 2 tablespoon brown sugar
- 2 cloves garlic, minced
- 1 teaspoon grated fresh ginger (optional)
- 1 tablespoon cornstarch + 1 tablespoon water (optional, for thickening)
Instructions
1. Season the pork loin with the salt, black pepper, garlic powder, and onion powder. Rub the spices all over the meat to ensure even coverage.
2. Place the seasoned pork loin into your slow cooker.
3. In a small bowl, combine the pineapple juice, pineapple chunks with juice, soy sauce, brown sugar, minced garlic, and grated ginger (if using). Stir the mixture well until the sugar has dissolved.
4. Pour the pineapple mixture over the pork loin, making sure it’s well coated.
5. Cover the slow cooker and cook on the LOW setting for 6-8 hours, or until the pork reaches an internal temperature of 145°F and is tender.
6. If you’d like a thicker sauce, mix the cornstarch and water in a small bowl to create a slurry. Stir the slurry into the sauce in the slow cooker, then cook on HIGH for an additional 5-10 minutes until the sauce has thickened to your desired consistency.
7. Carefully remove the pork loin from the slow cooker and let it rest for a few minutes before slicing.
8. Spoon the flavorful pineapple sauce over the sliced pork loin and serve.
