Description
Crockpot Ratatouille is a classic French vegetable stew that’s bursting with fresh, vibrant flavors. This easy-to-make dish combines eggplant, zucchini, bell peppers, onions, and tomatoes, simmered to perfection in a slow cooker. The result is a comforting, nutrient-dense meal that’s perfect for busy weeknights or as a side dish for any occasion.
Ingredients
- 1 eggplant, diced
- 2 zucchini, sliced
- 2 bell peppers, chopped
- 1 onion, chopped
- 4 tomatoes, diced
- 2 cloves garlic, minced
- 2 tablespoon olive oil
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
Instructions
1. Start by preparing the vegetables: dice the eggplant, slice the zucchini, chop the bell peppers and onion, and dice the tomatoes. Mince the garlic cloves as well. Once all the veggies are prepped, simply add them to your crockpot. Drizzle the olive oil over the top and sprinkle with the dried oregano, basil, salt, and pepper.
2. Cover the crockpot and cook the ratatouille on low for 6-8 hours or on high for 3-4 hours, until the vegetables are tender and the flavors have melded together. Give the mixture a gentle stir before serving to incorporate all the delicious juices.
Notes
Crockpot Ratatouille makes a wonderful side dish, but it can also be enjoyed as a main course. Serve it warm over rice, pasta, or crusty bread to soak up all the flavorful juices. It also pairs beautifully with grilled or roasted meats, such as chicken, fish, or pork. For a vegetarian or vegan option, top the ratatouille with creamy polenta or a scoop of quinoa.
