Ingredients
- 2 large cucumbers, thinly sliced
- 1 cup cherry tomatoes, halved

- 4 slices bacon, cooked and crumbled
- 1/4 cup panko breadcrumbs
- 1/2 tablespoon butter
- 1/2 cup mayonnaise
- 1 tablespoon Dijon mustard
- 2 cloves garlic, minced
- 3 anchovy fillets, minced (or 1 tablespoon anchovy paste)
- 2 tablespoon lemon juice
- 2 tablespoon grated Parmesan cheese
- Salt and black pepper to taste
Instructions
1. Start by melting the butter in a small skillet over medium heat. Add the panko breadcrumbs and toast, stirring regularly, until they turn a golden brown. Set the toasted breadcrumbs aside.
2. In a bowl, whisk together the mayonnaise, Dijon mustard, minced garlic, anchovies (or anchovy paste), lemon juice, and 2 tablespoon of grated Parmesan cheese. Season the dressing with salt and black pepper to taste.
3. Place the sliced cucumbers and halved cherry tomatoes in a large bowl. Add the 1/2 cup of grated Parmesan cheese, half of the crumbled bacon, and 2 tablespoon of the toasted breadcrumbs.
4. Pour the prepared Caesar dressing over the salad and toss everything together until the vegetables are evenly coated. Garnish the Cucumber Caesar Salad with the remaining bacon, breadcrumbs, and a sprinkle of extra Parmesan cheese.
