Ingredients
- 1/4 cup olive oil

- 2 cup cucumber, diced
- 2 cup cherry tomatoes, quartered
- 1/2 cup red onion, thinly sliced
- 8 ounce fresh mozzarella, diced
Instructions
1. In a small bowl, whisk together the olive oil, balsamic vinegar, dried oregano, dried basil, salt, and pepper. Set this flavorful marinade aside.
2. Peel the cucumber, then use a fork to lightly scrape the skin, creating a unique textured appearance. Slice the cucumber thin and dice it into bite-sized pieces.
3. Wash the cherry tomatoes, then quarter them and add them to the bowl with the diced cucumber.
4. Thinly slice the red onion and add it to the bowl, mixing everything together.
