  • 1/4 cup butter, melted
  • 1 tablespoon dark chocolate, melted
  • 4 ounces brick-style cream cheese, softened
  • 8 ounces dark chocolate, chopped
  • 3/4 cup heavy whipping cream
  • 1 tablespoon Baileys Irish Cream or Kahlua, optional
  • 1/2 teaspoon salt, optional and to taste but recommended
  • 1/2 cup mini semi-sweet chocolate chips

Instructions

1. To start, crush the Oreo cookies into fine crumbs using a food processor. Mix the cookie crumbs with the melted butter and melted dark chocolate until well combined. Press the mixture firmly into the bottom of an 8×8-inch pan lined with parchment paper. Place the crust in the freezer while you prepare the filling.

2. In a microwave-safe bowl, melt the chopped dark chocolate in 20-second intervals, stirring until smooth. Allow the chocolate to cool slightly. In a separate bowl, beat the softened cream cheese until smooth, then slowly add the melted chocolate, mixing until fully incorporated.

3. In another bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the chocolate-cream cheese mixture. Stir in the Baileys or Kahlua and salt, if using.

4. Spread the chocolate cheesecake filling evenly over the prepared Oreo crust. Sprinkle the mini chocolate chips on top and lightly press them into the surface.
