Easy Cheesy Meatball Subs are a comforting Italian delight, combining tender meatballs, gooey melted cheese, and tangy marinara sauce in toasted hoagie rolls.
Ingredients
- 1 pound ground beef
- 1/2 cup breadcrumbs
- 1 large egg
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper, to taste
- 1 1/2 cup marinara sauce
- 4 hoagie rolls
- 2 cup shredded mozzarella cheese
- 1/2 cup shredded provolone cheese (optional)
- Fresh parsley or basil, chopped (for garnish)
Instructions
1. Preheat your oven to 400°F. In a large bowl, combine the ground beef, breadcrumbs, egg, onion, garlic, Italian seasoning, salt, and pepper. Mix until just combined. Roll into 1–1.5 inch meatballs and place on a parchment-lined baking sheet.
2. Bake the meatballs for 18–20 minutes or pan-fry them in a skillet over medium heat until browned.
3. In a large saucepan, bring the marinara sauce to a gentle simmer. Add the cooked meatballs and let them simmer for 10–15 minutes.
4. Split the hoagie rolls open without cutting all the way through. Optionally brush with melted butter and toast in the oven for 3–5 minutes.
5. Spoon the meatballs and marinara sauce into each roll. Top with shredded mozzarella and provolone if desired. Broil for 2–3 minutes until cheese is melted and bubbly.
6. Garnish with freshly chopped parsley or basil before serving.
