Ingredients
- 1 pound lean ground beef
- 2 cup whole wheat penne pasta
- 1 cup cottage cheese
- 1/2 cup plain Greek yogurt
- 2 cup marinara sauce
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Fresh parsley, for garnish
Instructions
1. Preheat your oven to 375°F.
2. Boil the whole wheat penne pasta according to the package instructions. Drain well.
3. In a skillet, cook the ground beef with diced onion and minced garlic until browned. Drain excess grease and season with Italian seasoning, salt, and pepper.
4. In a bowl, combine cottage cheese and Greek yogurt.
5. In a large baking dish, mix cooked pasta, beef mixture, and marinara sauce. Dollop cottage cheese filling on top and spread evenly. Sprinkle mozzarella and Parmesan cheese over the dish.
6. Bake for 20-25 minutes or until cheese is melted and bubbly.
