Ingredients

  • 4 boneless, skinless chicken breasts
  • 8 ounce fresh mushrooms, sliced
  • 4 cup fresh spinach, roughly chopped
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup heavy cream
  • 2 cloves garlic, minced
  • 2 tablespoon olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste

Instructions

1. Preheat Oven: Set your oven to 375°F and lightly grease a baking dish.

2. Sauté Mushrooms: In a skillet, heat the olive oil over medium heat. Add the sliced mushrooms and cook for 5-7 minutes, until they’re golden and tender.

3. Add Garlic and Spinach: Stir in the minced garlic and cook for 1 minute. Then, add the chopped spinach and cook until it’s wilted, about 3 minutes. Remove the mixture from the heat.

4. Season the Chicken: Season the chicken breasts with salt, pepper, thyme, and oregano.

5. Assemble the Dish: Place the seasoned chicken breasts in the prepared baking dish. Spread the mushroom and spinach mixture evenly over the top of the chicken.

6. Add Cream and Cheese: Pour the heavy cream over the top of the dish, then sprinkle the shredded mozzarella and grated Parmesan cheeses over the top.

7. Bake: Bake the dish uncovered for 30-35 minutes, until the chicken is cooked through and the cheese is melted and golden.

8. Serve: Allow the bake to rest for 5 minutes before serving.
