  • 1/4 cup water
  • 6 large flour tortillas
  • 1 can (10 ounce) red enchilada sauce
  • 1 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • Optional toppings: chopped onions, sliced black olives, sour cream

Instructions

1. Preheat your oven to 350°F and lightly grease a 9×13 inch baking dish. Spread a small amount of enchilada sauce on the bottom of the dish.

2. Brown the ground beef in a large skillet over medium-high heat for about 8-10 minutes, until there is no pink remaining. Drain excess fat.

3. Add the taco seasoning and water to the cooked ground beef. Stir well and let simmer for 2-3 minutes.

4. Fold in the refried beans until fully incorporated with the seasoned beef.

5. Warm the flour tortillas in the microwave for about 15 seconds. Spoon approximately 1/3 cup of the beef-bean mixture onto each tortilla, fold the sides over, and roll it up, seam-side down in the baking dish.

6. Pour the remaining enchilada sauce over the top and sprinkle with cheddar and Monterey Jack cheeses.

7. Bake uncovered for 20-25 minutes, until cheese is melted and bubbly. Let rest for 5 minutes before serving, topping with desired garnishes.
