Ingredients
- 2 cup shredded cooked chicken
- 2 cup instant rice
- 1 can (10.5 ounce) cream of chicken soup
- 1 cup sour cream
- 1 cup frozen diced onion and bell pepper blend
- 1 can (10 ounce) diced tomatoes with chilies
- 1 cup chicken broth
- 2 tablespoon fajita seasoning
- 2 cup shredded Mexican cheese
Instructions
1. Preheat the oven to 350°F and lightly grease a 9×13-inch baking dish.
2. In a large bowl, combine the shredded chicken, instant rice, cream of chicken soup, sour cream, frozen onion and bell pepper blend, diced tomatoes with chilies, chicken broth, fajita seasoning, and 1 cup of the shredded Mexican cheese. Mix everything together until well blended.
3. Transfer the mixture to the prepared baking dish and spread it out evenly.
4. Cover the dish with foil and bake for 35 minutes. Remove the foil, top with the remaining shredded cheese, and bake for an additional 10 minutes or until the cheese is melted and bubbly.
5. Let the casserole rest for a few minutes before serving.

For best results, be sure to shred the chicken properly and avoid overcooking the instant rice to maintain the perfect texture.
