Ingredients
- 8 ounce penne pasta
- 1 cup crumbled feta cheese
- 1/2 cup dried cranberries
- 1/2 cup toasted walnuts
- 4 cup baby spinach
- 1/4 cup thinly sliced red onion
- 1/2 cup fresh orange juice
- 1/4 cup olive oil
- 1 tablespoon honey
- 1 tablespoon Dijon mustard
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
1. Cook the penne pasta according to package instructions until al dente. Drain and rinse under cold water.
2. In a small bowl, whisk together orange juice, olive oil, honey, Dijon mustard, salt, and black pepper until emulsified.
