  • 1 tablespoon fresh thyme
  • juice of 1 lemon
  • fresh parsley, chopped (for garnish)

Instructions

1. Start by patting the lamb chops dry with paper towels and seasoning them generously with salt and black pepper on both sides.

2. Next, create a flavor-packed marinade by combining 2 tablespoon of olive oil, minced garlic, chopped rosemary, thyme, and lemon juice in a small bowl.

3. Pour this mixture over the seasoned lamb chops, turning them to ensure even coverage. Allow the chops to marinate in the refrigerator for at least 30 minutes, or up to a few hours if you have the time.

4. About 10-15 minutes before you’re ready to cook, remove the marinated lamb chops from the refrigerator and let them come closer to room temperature.

5. Heat a heavy skillet over medium heat and add the remaining 1 tablespoon of olive oil.

6. When the oil is hot, add the lamb chops to the skillet, taking care not to overcrowd the pan. Sear the chops for about 3-4 minutes on the first side, then flip and cook for another 2-3 minutes for medium doneness.

7. Once the lamb chops are cooked to your liking, transfer them to a plate and loosely tent with foil. Allow the meat to rest for about 5 minutes.
