Ingredients

1 lb pork tenderloin, sliced into medallions

2 tablespoons olive oil

Salt and pepper, to taste

1 teaspoon Italian seasoning

4 tablespoons unsalted butter

4 cloves garlic, minced

1 cup rice (basmati or jasmine)

2 cups chicken broth or water

1/4 cup fresh parsley, chopped

1 tablespoon fresh thyme, chopped

1 tablespoon fresh basil, chopped (optional)


Instructions

1. Season pork medallions with salt, pepper, and Italian seasoning. Sear in a hot skillet with olive oil until browned on both sides. Remove and set aside.

2. Melt butter in the same skillet and sauté garlic until golden and fragrant.

3. Return pork to the pan and cook in garlic butter for 2–3 minutes per side until done.

4. In a saucepan, combine rice with broth or water. Bring to a boil, then cover and simmer until cooked.

5. Fluff rice with a fork and stir in parsley, thyme, and optional basil.

6. Plate pork over herb rice, drizzle with pan sauce, and garnish with parsley.

Notes

Substitute pork with chicken or turkey cutlets as needed.

Use brown rice for a healthier twist.

Adjust cook time based on meat thickness.
