Description
Gnocchi Carbonara with Bacon and Parmesan is a creamy Italian comfort dish featuring pillowy-soft potato gnocchi coated in a rich carbonara sauce, crispy bacon, and freshly grated Parmesan.
Ingredients
- 1 pound potato gnocchi
- 2 tablespoon bacon grease
- 6 ounce bacon, chopped
- 3 large eggs
- 2 large egg yolks
- 1 cup grated Parmesan cheese
- 1/2 teaspoon black pepper
- 1/4 cup chopped fresh parsley
Instructions
1. Bring a large pot of salted water to a boil. Add the gnocchi and cook until they float to the top, about 2-3 minutes. Drain, reserving 1 cup of the starchy cooking water.
2. In a large skillet, cook the chopped bacon over medium heat until crispy, about 5-7 minutes. Remove bacon, leaving 2 tablespoon of grease in the pan.
3. In a medium bowl, whisk together the eggs, egg yolks, Parmesan cheese, black pepper, and parsley until well combined.
4. Add the cooked gnocchi to the skillet with the reserved bacon grease and toss to coat. Remove from heat.
5. Drizzle the egg mixture over the gnocchi and toss vigorously to coat. Add reserved pasta water as needed for desired consistency.
6. Toss in the crispy bacon pieces and serve immediately, garnished with additional Parmesan and black pepper.
Notes
Avoid scrambling the eggs by removing the skillet from heat before adding the egg mixture.
Use reserved pasta cooking water to adjust sauce thickness.
Cook bacon until crispy but not burnt.
Store leftovers separately to maintain texture.
