Description

Craving a taste of the Mediterranean? Look no further than these Greek Chicken Gyro Bowls! Packed with juicy, flavorful chicken, fresh veggies, tangy feta, and creamy tzatziki sauce, this dish is a flavor explosion in every bite.

Ingredients

  • Boneless skinless chicken breasts – 1½ to 2 pounds
  • Olive oil – 2 tablespoons
  • Lemon juice (fresh) – 2 tablespoons
  • Garlic (minced) – 3 cloves
  • Dried oregano – 1 teaspoon
  • Ground cumin – ½ teaspoon
  • Paprika – ½ teaspoon
  • Salt – 1 teaspoon
  • Black pepper – ½ teaspoon
  • Cooked rice or quinoa – 2 cups
  • Cherry tomatoes (halved) – 1 cup
  • Cucumber (diced) – 1 cup
  • Red onion (thinly sliced) – ½ cup
  • Feta cheese (crumbled) – ½ cup
  • Tzatziki sauce – ¾ cup
  • Fresh parsley (chopped) – 2 tablespoons

Instructions

1. In a bowl, whisk together the olive oil, lemon juice, garlic, oregano, cumin, paprika, salt, and pepper. Add the chicken breasts and toss to coat them evenly in the marinade. Cover and refrigerate for at least 30 minutes, or up to 4 hours.

2. Heat a grill or large skillet over medium heat. Cook the marinated chicken for 6-7 minutes per side, or until it’s cooked through and reaches an internal temperature of 165°F. Remove the chicken from the heat and let it rest for a few minutes before slicing it into bite-sized pieces.

3. Divide the cooked rice or quinoa among individual serving bowls. Top each bowl with the sliced chicken, cherry tomatoes, diced cucumber, thinly sliced red onion, and crumbled feta cheese.

4. Generously spoon the cool, creamy tzatziki sauce over the top of each Greek Chicken Gyro Bowl.

5. Finish the bowls by sprinkling fresh chopped parsley over the top. Serve immediately, and enjoy!

Notes

These Greek Chicken Gyro Bowls are incredibly versatile. Consider serving them with warm pita bread or a fresh Greek salad. You can swap chicken for shrimp, lamb, or tofu for a vegetarian option.
