  • 1 pound ground beef
  • 2 medium zucchinis, diced
  • 1 cup uncooked long-grain white rice
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 (14 ounce) can diced tomatoes
  • 2 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoon lemon juice
  • 1/2 cup crumbled feta cheese

Instructions

1. Cook the rice according to the package instructions. Once it’s ready, set it aside.

2. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the ground beef and cook until browned. Drain any excess fat.

3. Add the remaining 1 tablespoon of olive oil, the diced onion, and the diced zucchini to the skillet. Cook for 5 to 6 minutes until softened.

4. Stir in the minced garlic, dried oregano, salt, and black pepper. Cook for an additional minute.

5. Pour in the can of diced tomatoes with their juices. Simmer for 5 to 7 minutes until thickened.

6. Remove from heat and stir in the lemon juice.

7. Divide the cooked rice among serving bowls. Top with the beef and zucchini mixture, then sprinkle with crumbled feta cheese.
