Ingredients
- Boneless, skinless chicken breasts or thighs
- Olive oil
- Fresh lime juice
- Garlic

- Cumin

- Sliced California avocados
- Halved cherry tomatoes
- Shredded mozzarella or Monterey Jack cheese
- Chopped cilantro (optional)
- Balsamic glaze (optional)

Instructions
1. Prepare the marinade by whisking together olive oil, lime juice, minced garlic, paprika, cumin, salt, and black pepper.
2. Place the chicken in a zip-top bag or shallow bowl and pour the marinade over it. Seal the bag and refrigerate for at least 30 minutes, up to 2 hours.
3. Preheat the grill to medium-high heat and lightly oil the grates.
4. Remove chicken from marinade and place on the grill. Cook for 6-7 minutes per side until cooked through (internal temperature of 165°F/75°C).
5. In the last 2 minutes of grilling, sprinkle shredded cheese over the chicken and close the grill lid to melt the cheese.
6. Top the grilled chicken with sliced California avocados and halved cherry tomatoes. Drizzle with balsamic glaze and sprinkle with cilantro and diced red onion if desired.
