Ingredients
8 oz sharp cheddar cheese, shredded
¼ cup diced pimento peppers
4 tablespoons cream cheese, at room temperature
¼ cup mayonnaise
½ tablespoon lemon juice
½ tablespoon chopped fresh chives
¼ teaspoon kosher salt
¼ teaspoon black pepper
Instructions
1. Combine the shredded cheddar, diced pimento peppers, cream cheese, mayonnaise, lemon juice, chives, salt, and pepper in a bowl.
2. Mix everything together until creamy and smooth.
3. Spread the pimento cheese filling on the unbuttered side of half of the bread slices.
4. Top with the other slices and spread seasoned butter on the outside.
5. Grill in a preheated skillet over medium heat for 3-4 minutes per side until golden brown and crispy.
Notes
For a spicier version, add a dash of hot sauce or diced jalapeños.
