Ingredients
- 1 pound ground beef
- 2 cup sweet potatoes, cubed
- 2 tablespoon taco seasoning
- 2 tablespoon olive oil
- 1 avocado, cubed
- 1 cup cottage cheese
- 1/4 cup hot honey
- 1 teaspoon salt
- 1/2 teaspoon pepper
Instructions
1. Prepare the sweet potatoes by cubing them and tossing with olive oil, salt, pepper, and taco seasoning. Air fry at 390°F for 12-16 minutes or roast in a preheated oven at 425°F for 20-25 minutes.
2. Brown the ground beef in a skillet over medium-high heat for 5-7 minutes until fully cooked.
3. Add taco seasoning to the browned beef and stir. Pour in 3/4 to 1 cup of water and simmer for 3-5 minutes.
4. Assemble the bowl by dividing the ground beef and sweet potatoes into serving bowls. Top with avocado and cottage cheese.
5. Drizzle hot honey over the top and garnish with cilantro or green onions.
