Ingredients

  • 1 cup orzo pasta
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes with herbs
  • 2 cups low-sodium beef broth
  • 2 cups fresh spinach (or other greens)
  • 1 tsp Italian seasoning (basil, oregano, thyme)

Instructions

1. Cook the Beef: In a large skillet over medium heat, cook the ground beef and onion until the beef is browned and the onion is soft, about 5–6 minutes. Drain excess fat if needed.

2. Add Garlic & Seasoning: Stir in the minced garlic and Italian seasoning. Cook for 1 minute until fragrant.

3. Add Orzo & Tomatoes: Stir in the orzo and diced tomatoes with their juices. Mix well to coat the orzo.

4. Pour in Broth: Add the beef broth and bring the mixture to a boil. Reduce heat to low, cover, and simmer for 10–12 minutes, stirring occasionally, until the orzo is tender and most of the liquid is absorbed.

5. Stir in Spinach: Add the fresh spinach and stir until wilted, about 2 minutes.

6. Serve: Taste and adjust seasoning with salt and pepper if desired. Serve this comforting Ground Beef Orzo warm for a hearty one-pan dinner!

Choose the right ground beef: Opt for a leaner ground beef, around 90% lean, to keep the dish from becoming too greasy.
