Ingredients

Scale
  • 1 pound lean ground turkey (or lean ground beef)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon paprika
  • 1 teaspoon garlic, minced
  • 1 1/2 tablespoons olive oil (or avocado oil)
  • 2 medium zucchini, cubed
  • 1 bell pepper, cut into 3/4-inch pieces
  • 1/2 white or yellow onion, cut into 3/4-inch pieces
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon paprika
  • 1/4 teaspoon black pepper
  • 1/2 cup water
  • 2 tablespoons tomato paste
  • 5 ounces fresh baby spinach

Instructions

1. In a large skillet over medium heat, cook the ground turkey with the salt, pepper, chili powder, oregano, paprika, and garlic until browned and fully cooked. Remove the turkey from the skillet and set it aside.

2. In the same skillet, heat the olive oil. Add the zucchini, bell pepper, and onion. Sauté for 5-6 minutes until the vegetables are tender.

3. Add the salt, garlic powder, onion powder, oregano, basil, paprika, and black pepper to the sautéed vegetables. Stir well to combine and coat the veggies with the flavorful seasoning blend.

4. Pour in the water and stir in the tomato paste. Let the mixture simmer for 2-3 minutes, allowing the flavors to meld together.

5. Return the cooked ground turkey to the skillet. Add the fresh baby spinach and cook for 2-3 minutes, until the spinach is wilted and perfectly incorporated into the dish.

6. Serve this hearty, healthy Ground Turkey and Zucchini Skillet straight from the pan, and enjoy this one-skillet wonder!

Notes

For the best results, be sure to use lean ground turkey or ground beef. This will help keep the dish light and nutritious. When seasoning the vegetables, don’t be afraid to get creative with the spices and herbs – play around with your favorite flavors to customize the dish to your taste. Adjusting the cooking times can also help you achieve your desired texture, whether you prefer your zucchini to be a bit more al dente or completely tender.
