Ingredients
- 1 pound boneless, skinless chicken thighs
- 1/2 cup soy sauce
- 1/4 cup brown sugar
- 2 tablespoon minced garlic
- 1 tablespoon grated ginger
- 1/2 cup pineapple juice
- 2 tablespoon mirin or rice vinegar
- 1 tablespoon sesame oil (optional)
- 2 green onions (for garnish)
- 2 tablespoon sesame seeds (for garnish)
Instructions
1. In a bowl, whisk together the soy sauce, brown sugar, minced garlic, grated ginger, pineapple juice, mirin or rice vinegar, and sesame oil (if using).
2. Place the chicken in a zip-top bag or shallow dish and pour the marinade over it, ensuring the chicken is fully coated.
3. Refrigerate for at least 4 hours, or ideally overnight.
4. Preheat your grill to medium-high heat or heat a lightly oiled skillet over medium-high heat.
5. Remove the chicken from the marinade and cook on the grill for 5-7 minutes per side or in the skillet until cooked through and reaches an internal temperature of 165°F.
6. Serve over rice and garnish with chopped green onions and sesame seeds.
Notes
For maximum flavor, marinate the chicken for up to 24 hours. Consider adding diced mango or papaya to the marinade for a tropical twist.
