Ingredients
- 1 tablespoon olive oil
- 1 pound Italian sweet sausage, casings removed
- 2 cup diced onion
- 1 cup diced celery
- 1 cup diced carrots
- 2 cup diced red bell pepper
- 4 cloves garlic, minced
- 1 pinch red pepper flakes
- 1/4 cup tomato paste
- 5 fresh plum tomatoes, diced
- 2 pound zucchini, cut into bite-sized pieces
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 2 quarts vegetable broth
- 1 cup coarsely grated Parmesan cheese plus Parmesan rinds (optional but recommended)
- 2 tablespoon chopped fresh basil
- 1 tablespoon chopped fresh oregano
Instructions
1. Heat Oil: In a large soup pot or Dutch oven, heat the olive oil over medium-high heat.
2. Brown Sausage: Add the Italian sausage (removed from casings) and break up the meat as it cooks until browned.
3. Sauté Veggies: Add onion, celery, carrots, and red bell pepper. Sauté for about 4 minutes until softened.
4. Add Flavor Base: Move veggies to the sides of the pot. Lower heat to medium. Add garlic, red pepper flakes, and tomato paste to the center and cook for about 2 minutes, stirring occasionally.
5. Add Main Ingredients: Stir in the diced plum tomatoes, zucchini pieces, salt, pepper, vegetable broth, Parmesan cheese and Parmesan rinds, fresh basil, and oregano.
6. Simmer: Bring soup to a medium simmer and cook uncovered until vegetables are tender, about 10-15 minutes after adding zucchini.
7. Finish & Serve: Remove the Parmesan rinds if used. Serve immediately with extra grated Parmesan and fresh basil on top if desired.
