Hobo Casserole, also known as Hamburger Potato Casserole, is a classic comfort food dish that combines ground beef, potatoes, and a creamy, cheesy sauce.
Ingredients
- 1 pound ground beef
- 1 medium onion, chopped
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 medium potatoes, thinly sliced
- 1 can (10.5 ounce) cream of mushroom soup
- 1/2 cup milk
- 1 1/2 cup shredded cheddar cheese
- 1/2 teaspoon paprika (optional, for garnish)
- 1 tablespoon butter, melted
Instructions
1. Preheat the oven to 375°F. Grease a 9×13-inch baking dish.
2. In a skillet, brown the ground beef with the chopped onion until fully cooked. Drain excess fat and season with garlic powder, onion powder, salt, and pepper.
3. Spread half of the thinly sliced potatoes in the bottom of the prepared baking dish.
4. Spoon the cooked beef mixture evenly over the layer of potatoes.
5. In a bowl, whisk together the cream of mushroom soup and milk until well combined. Pour half of this mixture over the beef layer.
6. Add the remaining potatoes, then pour the rest of the soup mixture over the top.
7. Sprinkle shredded cheddar cheese evenly over the casserole. Drizzle melted butter on top and sprinkle with paprika if desired.
8. Cover with foil and bake for 45 minutes. Remove foil and continue baking for an additional 15-20 minutes, or until potatoes are tender and cheese is bubbly.
9. Let cool for 5 minutes before serving.

Consider adding vegetables like bell peppers or peas.
