Ingredients
- 2 pound chicken thigh fillets, boneless and skinless
- 2 cloves garlic, minced
- 3 tablespoon lemon juice
- 3 tablespoon olive oil
- 2 teaspoon ground coriander
- 2 teaspoon ground cumin
- 2 teaspoon paprika
- 2 teaspoon salt
- 1 teaspoon ground allspice
- 1/4 teaspoon ground black pepper
- 1 1/2 cup plain yogurt
- 2 tablespoon mayonnaise
- 1 tablespoon Sriracha sauce (adjust to taste)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 8 pieces pita bread
- 3 cup lettuce, shredded
- 1 red onion, thinly sliced
- 4 tomatoes, sliced
Instructions
1. In a large mixing bowl, combine the chicken thighs with the minced garlic, lemon juice, olive oil, coriander, cumin, paprika, salt, allspice, and black pepper. Mix everything together until the chicken is evenly coated with the marinade. Cover the bowl and refrigerate for at least 1 hour, or up to 24 hours for the best flavor.
2. In a small bowl, whisk together the plain yogurt, mayonnaise, Sriracha (to taste), garlic powder, onion powder, salt, and pepper. Cover and refrigerate the sauce until ready to serve.
3. Heat a grill or grill pan over medium-high heat. Add the marinated chicken thighs and cook for 6-8 minutes per side, or until the chicken is fully cooked and slightly charred on the outside. Remove the chicken from the heat and let it rest for 5 minutes before slicing it into thin strips.
4. Wrap the pita bread in aluminum foil and warm it in a 350°F oven for 3-5 minutes, just until heated through and pliable.
5. Place the sliced, grilled chicken on the warm pita bread, then top it with shredded lettuce, thinly sliced red onion, and tomato slices. Drizzle the cool, creamy yogurt sauce over the top and roll up the shawarma to enjoy.
