Instructions

1. Preheat your oven to 400°F. Place a large roasting pan in the oven to heat up.

2. Peel the potatoes and cut them into quarters. Place in a large pot, cover with cold salted water, and bring to a boil. Cook for 10-15 minutes until edges soften but centers remain firm.

3. Drain the potatoes and let them steam dry for about 2 minutes. Shake the colander gently to roughen up the edges.

4. Sprinkle the flour over the potatoes and shake to coat evenly.

5. Add the hot oil or goose fat to the preheated roasting pan and heat for 2-3 minutes. Carefully add the potatoes, tossing to coat. Spread in a single layer and add garlic and herbs. Season with salt and pepper.

6. Roast for 30 minutes, toss gently, then continue roasting for another 25-35 minutes until golden-brown and crispy.
