  • 4 boneless skinless chicken breasts
  • 2 large sweet potatoes, peeled and cubed
  • 1 pound green beans, trimmed
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 3 cloves garlic, minced
  • 2 tablespoon olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • Salt and black pepper to taste

Instructions

1. Preheat your oven to 400°F.

2. In a small bowl, whisk together the honey, soy sauce, garlic, olive oil, paprika, thyme, salt, and pepper until well combined.

3. Place the chicken breasts in a shallow dish and pour half of the marinade over them. Toss to coat evenly and let rest for at least 30 minutes.

4. Spread the cubed sweet potatoes on a lined baking sheet. Drizzle with olive oil and season with salt and pepper. Toss to coat and roast for 15 minutes.

5. After the sweet potatoes have roasted, push them to one side of the sheet and place the marinated chicken breasts on the other side. Arrange the green beans around the chicken. Drizzle the remaining marinade over everything.

6. Return the baking sheet to the oven and bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F.
