Ingredients
- 1 pound smoked sausage
- 2 cup sweet potatoes, peeled and diced
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 small red onion, sliced
- 2 cup broccoli florets (optional)
- 1/4 cup honey
- 1/4 cup low-sodium soy sauce
- 3 cloves garlic, minced
- 1 tablespoon olive oil
- 1 tablespoon apple cider vinegar
- 1 teaspoon Dijon mustard (optional)
- 1/2 teaspoon black pepper
- a pinch of red pepper flakes (optional)
Instructions
1. Preheat your oven to 400°F and line a large sheet pan with parchment paper.
2. Add the sweet potatoes to the sheet pan, drizzle with a little oil (or 1 tablespoon of the sauce), and toss to coat.
3. Roast the sweet potatoes for 15 minutes to get them started.
4. Add the sausage, bell peppers, and onion (and broccoli if using). Pour the honey garlic sauce over everything and toss to coat.
5. Roast for an additional 15 to 20 minutes, tossing the ingredients once halfway, until the potatoes are tender and the sausage is nicely browned.
6. Serve the Honey Garlic Sheet Pan Sausage hot, either over rice or quinoa, or as a standalone dish. Be sure to spoon any delicious pan sauce over the top.
