Ingredients
- 2 cup cooked chicken breast, shredded
- ½ cup BBQ sauce (plus extra for drizzling)
- 2 tablespoon hot honey (plus extra for drizzling)
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- ¼ cup red onion, finely chopped
- ¼ cup bell pepper, finely chopped
- 4 large flour tortillas
- 1 tablespoon olive oil or butter
Instructions
1. In a bowl, combine the shredded cooked chicken with the BBQ sauce and hot honey. Mix thoroughly until the chicken is evenly coated.
2. Heat the olive oil or butter in a skillet over medium heat. Add the red onion and bell pepper, and sauté for 2-3 minutes until softened. Transfer to the chicken mixture and mix well.
3. Lay a tortilla flat and sprinkle cheddar cheese over one half. Top with the chicken mixture, drizzle with extra BBQ sauce and hot honey, then sprinkle mozzarella cheese on top. Fold the tortilla in half.
4. Heat a skillet over medium heat. Cook the quesadilla for 2-3 minutes per side until golden brown and cheese is melted. Repeat with remaining tortillas and filling.
5. Cut each quesadilla into wedges and serve hot with optional toppings like fresh cilantro and sour cream.
Notes
