Ingredients
For the Chicken:
-
4 boneless, skinless chicken thighs (or breasts)
-
1 cup buttermilk
-
1 cup all-purpose flour
-
1 tsp paprika
-
1 tsp garlic powder
-
1 tsp salt
-
1/2 tsp black pepper
-
Vegetable oil for frying
For the Biscuits:
-
2 cups all-purpose flour
-
1 tbsp baking powder
-
1/2 tsp baking soda
-
1/2 tsp salt
-
6 tbsp cold unsalted butter, cubed
-
3/4 cup buttermilk (store-bought biscuits can also be used)
For the Hot Honey:
-
1/2 cup honey
-
1–2 tsp red pepper flakes (adjust to taste)
-
1 tsp apple cider vinegar (optional)
-
Pinch of salt
Instructions
-
Prepare the Chicken:
In a bowl, soak chicken thighs in buttermilk for at least 30 minutes. In a separate bowl, mix flour, paprika, garlic powder, salt, and pepper. Coat chicken in the flour mixture. -
Fry the Chicken:
Heat vegetable oil in a skillet over medium-high heat. Fry chicken until golden brown and cooked through, about 6-7 minutes per side. Remove and set aside. -
Make the Biscuits:
Preheat the oven to 425°F (220°C). In a bowl, mix flour, baking powder, baking soda, and salt. Cut in butter until the mixture resembles coarse crumbs. Stir in buttermilk until dough forms. -
Bake the Biscuits:
Drop dough onto a baking sheet and bake for 12-15 minutes, or until golden brown. -
Make the Hot Honey:
In a saucepan, combine honey, red pepper flakes, apple cider vinegar (if using), and a pinch of salt. Heat over low until warmed through and well combined. -
Assemble the Biscuits:
Split the warm biscuits, add a fried chicken thigh to each, and drizzle with hot honey. Serve immediately.
Notes
-
For a dairy-free version, use plant-based butter and buttermilk alternatives.
-
Adjust the spice level of the hot honey by increasing or decreasing the amount of red pepper flakes.
-
If you’re short on time, pre-made biscuits work just as well.
