Ingredients

Scale

For the Chicken:

  • 4 boneless, skinless chicken thighs (or breasts)

  • 1 cup buttermilk

  • 1 cup all-purpose flour

  • 1 tsp paprika

  • 1 tsp garlic powder

  • 1 tsp salt

  • 1/2 tsp black pepper

  • Vegetable oil for frying

For the Biscuits:

  • 2 cups all-purpose flour

  • 1 tbsp baking powder

  • 1/2 tsp baking soda

  • 1/2 tsp salt

  • 6 tbsp cold unsalted butter, cubed

  • 3/4 cup buttermilk (store-bought biscuits can also be used)

For the Hot Honey:

  • 1/2 cup honey

  • 12 tsp red pepper flakes (adjust to taste)

  • 1 tsp apple cider vinegar (optional)

  • Pinch of salt

Instructions

  • Prepare the Chicken:
In a bowl, soak chicken thighs in buttermilk for at least 30 minutes. In a separate bowl, mix flour, paprika, garlic powder, salt, and pepper. Coat chicken in the flour mixture.

  • Fry the Chicken:
Heat vegetable oil in a skillet over medium-high heat. Fry chicken until golden brown and cooked through, about 6-7 minutes per side. Remove and set aside.

  • Make the Biscuits:
Preheat the oven to 425°F (220°C). In a bowl, mix flour, baking powder, baking soda, and salt. Cut in butter until the mixture resembles coarse crumbs. Stir in buttermilk until dough forms.

  • Bake the Biscuits:
Drop dough onto a baking sheet and bake for 12-15 minutes, or until golden brown.

  • Make the Hot Honey:
In a saucepan, combine honey, red pepper flakes, apple cider vinegar (if using), and a pinch of salt. Heat over low until warmed through and well combined.

  • Assemble the Biscuits:
Split the warm biscuits, add a fried chicken thigh to each, and drizzle with hot honey. Serve immediately.

Notes

  • For a dairy-free version, use plant-based butter and buttermilk alternatives.

  • Adjust the spice level of the hot honey by increasing or decreasing the amount of red pepper flakes.

  • If you’re short on time, pre-made biscuits work just as well.
