Description

This Jalapeño Popper Stuffed Chicken & Bacon Roll is a delicious combination of tender chicken breasts filled with a creamy jalapeño cheese mixture and wrapped in crispy bacon. Perfect for a family dinner or special occasion!

  • 4 Boneless, Skinless Chicken Breasts
  • 8 slices Bacon
  • 8 oz Cream Cheese, softened
  • 1 cup Shredded Cheddar Cheese
  • 23 Jalapeños, diced
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • Salt and Black Pepper, to taste
  • 1 cup Breadcrumbs (plain or seasoned)
  • 2 tbsp Olive Oil

Instructions

  1. Prepping the Chicken: Start by placing your chicken breasts between two sheets of plastic wrap. Using a meat mallet, gently pound the chicken to an even thickness of about ½ inch.
  2. Making the Stuffing: In a mixing bowl, combine the softened cream cheese, shredded cheddar, diced jalapeños, garlic powder, onion powder, salt, and black pepper. Stir until well combined.
  3. Wrapping the Chicken: Spread a generous layer of the cheese mixture over each chicken breast. Roll the chicken tightly from one end to the other and wrap each roll with two slices of bacon, securing with toothpicks.
  4. Prepare for Baking: Preheat your oven to 375°F (190°C). Place the bacon-wrapped chicken rolls in a baking dish. Drizzle with olive oil and sprinkle breadcrumbs on top.
  5. Bake: Bake for 30-35 minutes, or until the chicken is cooked through (internal temperature of 165°F or 75°C) and the bacon is crisp.
  6. Cool and Serve: Allow the rolls to cool for a few minutes before slicing and serving.
