Keto Crispy Reuben Roll-Ups: A Delectable Low-Carb Twist on a Classic Sandwich
Ingredients
- 8 slices Swiss cheese
- 8 ounce sliced corned beef (or pastrami)
- 1 cup sauerkraut, drained and squeezed very dry
- 1/2 cup mayonnaise
- 2 tablespoon sugar-free ketchup
- 1 tablespoon sugar-free dill pickle relish
- 1 teaspoon minced onion
- 1/4 teaspoon paprika
- 1 teaspoon Worcestershire sauce (optional)
Instructions
1. Preheat your oven to 375°F. Line a large baking sheet with parchment paper.
2. In a small bowl, whisk together the mayonnaise, sugar-free ketchup, pickle relish, minced onion, paprika, and Worcestershire sauce (if using). Set aside.
3. Arrange the Swiss cheese slices on the prepared baking sheet, making sure to leave a little space between them. Bake for 6 to 8 minutes, until the cheese is melted, bubbly, and the edges start to brown.
4. Once the cheese is out of the oven, let it cool for 30 to 60 seconds, just until it’s flexible but not runny. Spread a thin layer of the keto dressing over each cheese slice, then add a layer of corned beef and a small pinch of sauerkraut.
5. Carefully roll up the cheese slices tightly, placing the seam-side down as you go. Let the roll-ups cool for a few minutes to help them crisp up.
6. Slice the Keto Crispy Reuben Roll-Ups into bite-sized pieces if desired, and serve with any extra dressing for dipping.
Notes
Ensure cheese is perfectly melted.
Properly drain sauerkraut to prevent sogginess.
