Ingredients
- 1 tablespoon olive oil
- 1 pound kielbasa, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 4 potatoes, peeled and diced
- 1 cup heavy cream
- Salt and pepper to taste
- 2 tablespoons parsley, chopped
Instructions
1. Sauté the Kielbasa: In a large pot, heat the olive oil over medium heat. Add the sliced kielbasa and cook until browned, about 5-7 minutes. Remove the kielbasa from the pot and set it aside.
2. Cook the Onion and Garlic: In the same pot, add the chopped onion and cook until softened, about 3-5 minutes. Stir in the minced garlic and cook for an additional minute.
3. Add the Potatoes and Broth: Pour in the chicken broth and add the diced potatoes. Bring the mixture to a boil, then reduce the heat and simmer for 15-20 minutes, or until the potatoes are tender.
4. Finish the Soup: Stir in the heavy cream and return the cooked kielbasa to the pot. Simmer for another 5 minutes to allow the flavors to meld.
5. Season and Serve: Season the soup with salt and pepper to taste. Garnish with chopped parsley and serve warm.
