  • 3 cup diced russet potatoes
  • 1 pound smoked kielbasa sausage, sliced
  • 1 cup sour cream
  • 1/2 cup milk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup chopped onions
  • 2 cloves garlic, minced
  • 2 tablespoon butter

Instructions

1. Preheat your oven to 375°F. Lightly grease a 9×13-inch baking dish.

2. Place the diced potatoes in a large pot of salted water. Bring to a boil and cook for 8 minutes. Drain well.

3. In a large skillet over medium heat, melt the butter. Add the kielbasa slices and cook for 3-4 minutes until browned. Stir in the chopped onion and minced garlic; cook for 2 minutes more. Remove from heat.

4. In a mixing bowl, whisk together the sour cream, milk, garlic powder, onion powder, salt, and pepper until smooth.

5. Spread the parboiled potatoes in the baking dish. Top with the kielbasa mixture, then pour the sour cream sauce over everything. Sprinkle the cheddar and mozzarella cheeses on top.

6. Cover with foil and bake for 20 minutes. Remove foil and bake for an additional 10-15 minutes until cheese is bubbly and golden brown.

7. Let stand for 5 minutes, then serve hot.
